The truth is, your body can only absorb so many nutrients at one time. Your waistline--and your wallet--is better off eating the whole produce. Finally, unless you've been diagnosed with celiac disease or a gluten intolerance, there is no reason to be buying gluten-free foods. They come with a hefty markup—and for the healthiest diet, you should be avoiding foods sold in a bag or a box anyway.
